Possible to separate tax from payments?

Hi, is it possible to separate the tax from payments? I'm in Australia and need to separate the GST (usually 10% but sometimes less) from transactions / payments for my tax reporting.

I read that bills have tax attached but things like fuel receipts also incur tax and I can't create a bill for those because the amounts and dates of purchase are never the same amount.

Any suggestions?
